綠豆的功效:
明代醫學家李時珍的《本草綱目》說綠豆:「補益元氣,調和五臟。」 因為綠豆具有清熱消暑,利尿消腫,潤喉止渴及明目降壓的功效。 現代研究證實,綠豆蛋白質高、脂肪低,熱量不高旦富含膳食纖維,能降低膽固醇及血脂肪,有助於腸胃蠕動及促進排便。
綠豆湯的煮法:
鍋內放入800c.c.的水,將水煮滾。 放入200克事先洗好,但沒有浸泡的綠豆。 鍋子加蓋,綠豆以滾水煮10分鐘,熄火後不動鍋蓋燜10分鐘,再開火煮約3分鐘後,加糖熄火再燜10分鐘即可。

How to cook green bean soup:
Put 800c.c. of water into the pot and bring the water to a boil. Put in 200g of green beans that have been washed beforehand but not soaked. Cover the pot and boil the green beans for 10 minutes. After the heat is turned off, let the lid simmer for 10 minutes, then turn on the heat and cook for about 3 minutes. Add sugar, turn off the heat and simmer for another 10 minutes.
